Easy Black Bean Soup

This is a great thing to whip up in 2 minutes. A quick, easy protein-packed vegetarian meal for one. The key is the cuban black beans from trader joes. I like to have for the nights when you just need to grab something quick. Simple yet satisfying!

 

 

 

Ingredients:

  • 1 can Trader Joe’s Cuban Black Beans
  • 1 tbsp plain greek yogurt
  • ½ tsp cumin (or to taste)
  • ¼ avocado, chopped
  • fresh cilantro optional

Puree all the ingredients except avocado, warm up and top with avocado and/or fresh cilantro.

PB Veggie & Fruit Dip

pb-dipThis dip is a great way to incorporate more veggies into your diet. Serve with a variety of veggies and fruit before dinner time. Make it colorful and pretty. My kids eat more veggies when they have a dip they like. The perfect pre-dinner snack!

 

 

Ingredients:

  • ¼ cup plain 2% greek yogurt
  • 1-2 tbsp natural peanut ut

Mix well, divide into 2 servings. Dip with fresh veggies!

Bars

kind barI have been asked so many times about bars.  I generally try to stay away from bars because they are usually loaded with unknown ingredients and too much sugar.  But, I know everyone wants the option to have a quick go-to snack when we are running out the door with no time to grab anything else.  I recently discovered these Kind Bars called Kind Dark Chocolate Nuts and Sea Salt.  They have only 5g of sugar and they are delicious.  They satisfy both sweet and salty cravings with a hint of each!  200 calories, 6g of protein and 7g of fiber.  Make sure to drink with a big glass of water to keep you full even longer.
