So delicious! Each cookie has 80% vitamin A (great for immune health)
- 1 cup sweet potato, cooked and mashed
- 1/2 cup almond butter
- 2 eggs
- 1 tsp vanilla
- 1 tsp cinnamon
- 2 tbsp maple syrup
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/3c coconut sugar, optional
- Add ins 1/4 cup mini choc chip
Steam sweet potatoes for 15 minutes and mash. Preheat oven to 375 degrees.
Combine sweet potato, almond butter and eggs in a large bowl and mix well. Add in vanilla, cinnamon, maple syrup, walnuts.
Add flour and baking soda and stir.
Scoop onto cookie sheet lined with parchment paper (12 cookies).
Bake at 375 degrees for 10-12 minutes.
Each cookie: 170 calories, 9g fat, 3g fiber, 16g sugar, 4g protein
*To cut the sugar, omit the coconut sugar and/or add walnuts in place of chocolate chips
