Chocolate Zucchini Protein Muffins

The perfect way to curb your sweet tooth! These muffins have 9g of protein each and 4g of fiber! 

So chocolatey and delicious! 

Wet Ingredients: 

  • 1 ripe banana
  • 1 large egg
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 cup almond butter

Preheat oven to 375 degrees. In a blender, add wet ingredients & blend together; pour into a mixing bowl.

Dry Ingredients:

Add above dry ingredients and mix with a fork/whisk until well combine. 

Mix in:

  • 1 cup shredded zucchini (squeeze out excess liquid and chop up into small pieces)
  • 2 tbsp Enjoy Life Mini Chocolate Chips 

Using 1/3 cup measuring cup, pour muffin mixture into muffin liners. Bake 20 minutes. Allow them to completely cool, store in covered container in the refrigerator. They also freeze well! 

Makes 9 muffins. Per Muffin: 196 calories, 11g fat, 18g carbs, 3g fiber, 12g sugar, 9g protein
