Dirty Cauliflower Rice

Dirty Cauliflower Rice

Full of Flavor and Veggies!

 

Ingredients:

  • 16oz bag riced cauliflower

  • 1 trader joes mirepoix (chopped onion, carrot, celery)

  • 2lbs wild caught shrimp

  • 2 tablespoons avocado or olive oil

  • 3 garlic cloves, minced

  • 1 pound nitrate free chicken sausage, sliced

  • 1 teaspoon kosher salt

  • 1 teaspoon ground black pepper

  • 1/4 teaspoon ground cayenne

  • 1 tablespoon smoked spanish paprika (sweet)

  • 1 teaspoon dried thyme

  • 1 tablespoon dried oregano

  • 1 cup chicken broth

1. Heat 1 tablespoon oil in a medium skillet over medium heat, and add mirepoix. Saute until translucent, then add the garlic. Saute for 5 minutes.

2. Add sausage, riced cauliflower, spices, seasoning, and broth. Reduce heat to low, and let simmer 10 minutes, until the liquid is reduce by 3/4.

3. While the vegetables simmer, saute shrimp in a separate pan in 2 tbsp grassfed butter over medium heat. Continue to stir 3 minutes. Reduce to low heat & cover for 2-3 minutes. 

4. Add shrimp to rice mixture.
