Granola

Granola

So good and so easy to make! 

  • 2 cups rolled oats
  • 1 cup sliced almonds
  • 1/2 cup sunflower seeds
  • 2 tbsp ground flaxseed
  • 3/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp vanilla extract

Preheat oven to 300 degrees. Line a baking sheet with parchment paper. In a large bowl, mix together oats, nuts, flaxseed, salt and cinnamon. In a saucepan, heat coconut oil, maple syrup and coconut sugar over low heat, after sugar is melted, turn up the heat to medium to bring to a soft boil, stirring frequently for about 3 minutes. Remove from heat, add vanilla extract and pour mixture over the dry ingredients. Mix well and spread onto parchment paper. Bake for 40 minutes. Remove from heat and let it cool completely. Break it up and store in air tight container. 

7 servings/per: 200 calories, 13g fat, 20g carbs, 3g fiber, 8g sugar, 5g protein
