Turkey Taquitos

Turkey Taquitos

I love Mexican Food! And this one is a yummy easy to eat taquito without all the mess.

Found the recipe on unbound wellness.com and modified it a bit. Super easy and yummy!

Ingredients:

Guac:

3 medium avocados

Juice of half a lime

2 tbsp cilantro, chopped (optional)

1 tsp garlic powder

1/2 teaspoon salt

Meat mixture:

1lb organic ground turkey

1/2 cup frozen chopped onions

1 cup zucchini, shredded (and excess water squeezed out)

1 tsp kosher salt

1 tsp garlic powder

1 tsp cumin

1 tsp paprika

1 tsp dried oregano

10 grain-free tortillas (I use Siete Almond flour tortillas or Trader Joes has smaller almond flour ones too!)

Directions:

Preheat oven to 400.
Make the avocado mixture by mashing the avocado and combining it with the lime juice, and seasonings. Set aside.

Over medium to high heat, cook ground turkey and onion. As turkey has started cooking; add in zucchini, continously stirring. Crumble the turkey until fully cooked, add seasoning & mix well. Set aside.

Heat the tortillas for about 5-10 seconds to make them more pliable. Spoon 1 large spoonful of the guacamole mixture, and about 2 spoonfuls of the turkey mixture. Roll into a tight taquito and transfer to the baking sheet. Repeat with all of the tortillas. Spray with avocado oil spray.

Bake the taquitos in the preheated oven for 15 minutes or until crisp.

Remove from the oven and serve topped with cilantro, guacamole or salsa on the side to dip.
