I saw this on kalejunkie and had to try it! It was so good! I made it with this protein pancake recipe. It's the perfect way to get a little more protein in your kids!
1 eggs at room temperature
2 tbsp unsweetened almond milk at room temp
1 tablespoon maple syrup at room temp
1/4 cup unsweetened applesauce at room temp
3/4 cup old-fashioned gluten free rolled oats
1 scoop Inspire Wellness unflavored collagen
1 teaspoon baking powder
1/8 teaspoon Himalayan salt
1/4 teaspoon pure vanilla extract
Mix all ingredients. Spray a small skillet with avocado oil. Over medium heat, add ingredients & scramble up just like eggs. Split into two servings.
Top with fresh berries, a drizzle of maple syrup or whip!
Each serving has 12g protein & only 2g sugar (without toppings).
