I dont remember where I found this recipe because I have had it so long but an easy one in the slow cooker and one that kids like! Easy weeknight dinner and can be served with rice, quinoa, cauliflower rice or as is.
INGREDIENTS
- 1/2 large sweet potato, chopped
- 1-1 1/2 large carrots, peeled and chopped
- 1 pound boneless, skinless chicken breast or thighs
- 2 cloves garlic, minced
- 1/2 Tbsp fresh ginger (i use the paste)
- 1/8 cup ketchup
- 1 Tbsp honey
- 1 Tbsp braggs liquid aminos
- 1/2 cup chicken broth
DIRECTIONS
Chop the sweet potato and carrots to roughly the same size pieces and place in the bottom of the slow cooker.
Add chicken.In a small bowl, whisk together remaining ingredients.
Pour over chicken and cook in a slow cooker on low for about 6 hours.
