INGREDIENTS
12 slices of turkey bacon
12 eggs
parchment paper muffin liners
3/4 cup cauliflower rice
DIRECTIONS
Preheat oven to 400. Use parchment paper muffin liners or heavily grease the muffin tin. Then line with a strip of bacon creating a circle.
Place the bacon lined muffin tin in the oven for 15 minutes to cook the bacon slightly.
Remove the muffin tin from the oven, put 1-2 spoonfuls of cauliflower rice in each one and then crack one egg into each.
Place it back into the oven for 15-20 minutes depending on the egg yolk
preference (runny or more hard boiled)
Let it cool and remove bacon wrapped egg cup and enjoy!
Store in fridge and reheat as need for 4-5 days.
