These superhero muffins were taken from a runners cookbook. I've added collagen to get that protein boost. They are delicious!
- 2 cups almond meal
- 1 cup rolled oats (gf if needed)
- 1/2 cup walnuts
- 1/2 cup raisins
- 2 scoops Inspire Wellness Unflavored Collagen
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp baking soda
- 1/2 tsp himalayan salt
- 3 eggs, beaten
- 2 cups shredded zucchini or carrots
- 1/4 cup melted butter
- 1/4 cup avocado oil
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- parchment paper muffin liners
Preheat oven to 350 degrees. In a large bowl, combine all dry ingredients (all ingredients listed at the top through salt). In another bowl, combine all the wet ingredients. Add wet to dry. Scoop into muffin liners and bake 18-25 minutes.
