So delicious! Each cookie has 80% vitamin A (great for immune health)
- 1 cup sweet potato, cooked and mashed
- 1/2 cup almond butter
- 2 eggs
- 1 tsp vanilla
- 1 tsp cinnamon
- 2 tbsp maple syrup
- 1/4 cup coconut flour
- 1 tsp baking soda
Optional
- 1/3c coconut sugar, if you want additional sweetness
- 1/3 cup Inspire Wellness Unflavored Collagen, for added protein
- 1/4 cup mini choc chips
Steam sweet potatoes for 15 minutes and mash. Preheat oven to 375 degrees.
Combine all ingredients (except chocolate chips) in a mixing bowl and use an electric beater to mix.
If batter is not a cookie consistency, you can either add more flour/protein OR refrigerate for 20 minutes.
Use a cookie scoop and place onto a cookie sheet lined with parchment paper (12 cookies).
Bake at 375 degrees for 12-18 minutes.
