This coconut smoothie just feels like summer! It was inspired by a leftover can of coconut milk in my fridge that needed to get used up. It was delish! So if you are a coconut lover, give it a try!
- 1 cup unsweetened vanilla almond milk (could use coconut milk here too)
- 2 scoops Inspire Wellness Vanilla Collagen Protein Powder
- 1 tbsp ground flaxseed
- 1 frozen banana (peel, break into pieces and freeze in ziplock)
- 1 cup frozen cauliflower rice
- 2 heaping spoonfuls of canned coconut milk *
- Optional to add 1 tbsp shredded coconut in the smoothie or on top for garnish
*I suggest shaking up your can of coconut milk and then leaving in upside down in your fridge overnight to get the creamy parts all mixed in.
