Chicken Taco Bowl

Slow Cooker Meat:
1-1.5lb Organic Chicken Breast or Thigh
Simply Organic Simmer Sauce
Cook in slow cooker on low for 3-4 hours

Cook rice according to package, then add avocado oil, juice from 1/2 lime, salt to taste, 1 tsp cummin (or more to taste), fresh cilantro.

Peppers & Onions:
Thinly slice peppers & onion.
In a large skillet over medium heat, heat 1-2 tbsp avocado oil & add peppers, onions. Sprinkle with 1 tbsp dried oregano and 1/2 tsp salt. Cook, tossing occasionally, until slightly softened but still tender-crisp, about 5-7 minutes. Remove from heat and serve.

Smash 3 avocados + 1/2-1 tsp salt + 1/2 lime juice, fresh cilantro.
