Coconut Curry Stirfry


  • 1lb organic chicken

  • 1 tbsp coconut oil

  • 14oz can coconut milk

  • 1/4 cup Bragg’s Liquid Aminos

  • 1 1/2 tsp curry powder

  • 1 garlic, minced

  • 1 tsp ground ginger

  • Stir-Fry Veggies (I buy the pre-cut Trader Joe’s)

  • Rice

Cut up chicken into bite size pieces and sauté in skillet with coconut oil until cooked throughout. Set chicken aside. In skillet, combine coconut milk and seasonings, whisk together and bring to a boil. Add in veggies, cover and reduce to medium heat. Cook for about 4-5 minutes. Stir in chicken and serve over rice.
