Cranberry Tuna Salad

Cranberry Tuna Salad

Ingredients:
  • 2 cans of solid wild tuna in water (5 ounce cans)

  • 1/4 cup mayonaise (I use the paleo avocado based mayo)

  • 1/4 cup finely chopped red onion

  • 1 lemon, juiced

  • 1/2 cup dried cranberries

  • 1/4 -1/2 teaspoon salt

  • 1 tsp dill

Open the tuna, drain. Soak cranberries in warm water for 10 minutes to soften up. Then drain. Mix tuna, lemon juice, salt, dill and red onion together with a fork, breaking it up into small pieces. Add cranberries and mayo. Serve on greens, with crackers, in a pita or wrap.

*This tastes better after it sits overnight. It is the perfect make-ahead meal!
