I am not sure where I originally got this recipe from...there are many out there that are very similar. You can leave the beans in or do without. Either way, this is simple, delicious and makes the perfect leftovers! I always double the recipe to have enough for lunches :)
- 16oz 93% lean ground turkey
- ½ cup onion (I use frozen chopped)
- 3 cloves garlic, crushed
- 30oz can diced tomato
- 1 can white beans, drained & rinsed
- 4oz mushrooms, chopped
- 1 red pepper, chopped
- 1 cup water
- 1 tsp cumin
- 1/2 tsp chili powder
- 1 tsp paprika
- 1 tsp salt
- 1 medium sweet potato, peeled and diced
- Optional: Top with Avocado, cilantro or shredded cheddar cheese
DIRECTIONS
In large skillet brown the turkey and break into smaller pieces. In a dutch oven, cook onion & garlic & for 2-3 minutes. Add remaining ingredients. Simmer on medium heat about 30 mins or until potatoes are soft. (I also like to do this in the crock pot after the turkey is browned.)
