These gluten free muffins are the perfect way to enjoy fall, with clean ingredients and without all the sugar. This was inspired from glutenfreepalate.com
Ingredients:
- 2 cups super fine almond flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup coconut oil, melted and cooled (or oil of choice)
- 1/4 cup pure maple syrup
- 2 large eggs, room temperature
- 2 scoops Inspire Wellness Unflavored Collagen
- 2/3 cup pumpkin puree
- 1 teaspoon gluten-free vanilla extract
- 1 teaspoon pumpkin spice
- 1/2 cup gluten-free, dairy-free chocolate chips
Preheat oven to 350. Mix all the dry ingredients in one bowl and wet in another. Add wet to dry and then stir in chocolate chips.
Bake 22-25 minutes.
