Pumpkin Protein Bars

Who else wants everything pumpkin right now?! I like to find healthier ways to enjoy the taste of pumpkin without all the sugar and empty calories. And, with protein! It will help keep your blood sugar stable and you won't even taste it!

Ingredients:

  • ½ cup pumpkin puree
  • ½ cup maple syrup
  • ½ cup natural creamy almond butter
  • 2 large eggs
  • ½ tsp. vanilla extract
  • ½ cup blanched almond flour
  • 3 scoops Inspire Wellness Unflavored Collagen Protein
  • 2 tsp. pumpkin pie spice
  • ¼ tsp. baking powder
  • ¼ tsp. himalayan salt
  • 1/3 cup enjoy life mini chocolate chips

DIRECTIONS

Preheat the oven to 350 degrees. Mix all wet ingredients together in a bowl and all dry ingredients in a bowl. Combine the wet and dry until mixed together. Lastly, hold in chocolate chips, making sure they evenly distribute in the batter.

Transfer mixture to a lightly greased 8x8-inch baking dish. 

Bake for 30 to 35 minutes.

Let pumpkin bars cool completely before slicing and enjoying! Cut into 16 pieces.

Each bar: 123 calories, 7g fat, 10g carbs, 1g fiber, 8g sugar, 6g protein
