Pumpkin Protein Breakfast Cookies

Who doesn't love a little pumpkin this time of year! This pumpkin cookie recipe, I found on Pinterest and added some unflavored collagen to increase the protein intake. They are so good...low in sugar, clean ingredients and satisfying! Note: they are not super sweet, so if you are wanting sweetness, add more maple syrup. 

Ingredients: 

  • 1/2 cup pumpkin puree
  • 1/2 cup mashed banana (about 1 banana)
  • 1/4 cup maple syrup (or more if you want it sweeter)
  • 1/4 cup peanut butter or almond butter 
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats (gluten free if needed)
  • 1 teaspoon cinnamon
  • 1 tsp pumpkin pie spice
  • 2 scoops Inspire Wellness Unflavored Collagen
  • Mix In: 1/4 cup Enjoy Life dairy-free chocolate chips and chopped nuts 

Mix all ingredients together by hand or with an eclectic mixer. Lastly, fold in chocolate chips or nuts. 

Bake at 375 for 15-18 minutes. Take out of oven and flatten with a spatula.
