- 1lb organic ground turkey
- ½ cup onion (I use frozen chopped)
- 3 cloves garlic, crushed
- 30oz can diced tomato
- 1 can white beans, drained & rinsed
- 4oz mushrooms, chopped
- 1 red pepper, chopped
- 1 cup water
- 1 tsp cumin
- 1/2 tsp chili powder
- 1 tsp paprika
- 1 tsp salt
- 1 medium sweet potato, peeled and diced
Optional: Top with Avocado, cilantro or shredded cheddar cheese
In large skillet brown the turkey and break into smaller pieces. In a dutch oven, cook onion & garlic & for 2-3 minutes. Add remaining ingredients. Simmer on medium heat about 30 mins or until potatoes are soft.
