The perfect way to curb your sweet tooth! These muffins have 9g of protein each and 4g of fiber!
So chocolatey and delicious!
Wet Ingredients:
- 1 ripe banana
- 1 large egg
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/2 cup almond butter
Preheat oven to 375 degrees. In a blender, add wet ingredients & blend together; pour into a mixing bowl.
Dry Ingredients:
- 4 scoops Inspire Wellness Chocolate Collagen Powder
- 1/4 cup cacao powder
- 2 tbsp ground flaxseed
- 1/2 tsp baking soda
Add above dry ingredients and mix with a fork/whisk until well combine.
Mix in:
- 1 cup shredded zucchini (squeeze out excess liquid and chop up into small pieces)
- 2 tbsp Enjoy Life Mini Chocolate Chips
Using 1/3 cup measuring cup, pour muffin mixture into muffin liners. Bake 20 minutes. Allow them to completely cool, store in covered container in the refrigerator. They also freeze well!
