This just reminds me of a eating ice cream with toppings! It is so yummy yet healthy. Win-Win
The key is to measure out the granola (if you are like me, I can just eat and eat it). So measure it out and put it away!
- 3/4 cup unsweetened vanilla almond milk (+ more as needed)
- 2 Scoops Inspire Wellness Vanilla Collagen Protein
- 1 tbsp ground flaxseed
- 1 tsp vanilla extract
- 1/2 cup - 1 cup frozen cauliflower rice *
- 1 frozen banana (medium to large)
- 1/4 cup Purely Elizabeth granola
Blend all ingredients except for the banana & granola. This will ensure all the cauliflower will get blended up before adding in the banana which makes it thick and creamy. Add the banana and continue blending, adding in additional milk as needed. Pour into a bowl and top with granola.
*The more cauliflower you add, it will take away from the sweetness. So if you like it sweet, start with 1/2 cup.
