5 Minute Shrimp

Ingredients:

  • 4 tbsp grass-fed butter

  • 1lb shrimp (peel, deveined and tails removed) - I personally love *Trader Joe’s Wild Argentine Shrimp

  • 1 tsp oregano

  • salt and pepper to taste

  • 2 garlic cloves, minced

  • 1 lemon, juiced

Optional Ingredients:

  • Bibb or other soft lettuce

  • 1 avocado, chopped

To defrost shrimp, place in a colander with cold water running over shrimp. Place butter and garlic in a large pan and melt over medium-high heat. Add in defrosted shrimp and season with salt, pepper and oregano. Cover and cook 4-5 minutes. Remove from heat and add lemon juice over shrimp. If making the salad, pour the shrimp and sauce in a big bowl with chopped up bib lettuce & avocado. I also serve over cauliflower rice or really with any side dishes! It is so good and super easy!

*The Wild Argentine Shrimp looks like it is cooked but it is raw.
