These nachos are so good and I prefer making them vs ordering them out somewhere. You can get higher quality tortilla chips and each chip is loaded with toppings (you will also eat less of them because they are filling and satisfying.). I look for organic or non-gmo corn tortilla chips that do not contain canola oil. These are the Late July Multi-grain (that has 2g of fiber too!).
Toppings:
- Refried Beans
- Avocado, chopped up
- Rotisserie Chicken, chopped up
- Black Olives, sliced
- Shredded Cheddar
- Salsa
Line a baking sheet with parchment paper and line up tortilla chips. Spread refried beans on each chip, then add the remaining toppings. I try to get every topping on each chip. Bake 350 degrees for 10 minutes or until cheese is melted.
