I like to make something ahead of time so we have something in the fridge to grab at lunchtime. But that doesn't always happen! OR, by the end of the week we are out of everything. Here are some of my favorite to-go lunch ideas!
Favorite Make-Ahead
- Copy Cat Cranberry Tuna Salad (with crackers, in a Siete almond flour wrap + sprouts or over any greens)
- Chicken Salad: I make this quick recipe with a rotisserie chicken. The Tahini I buy is from Fresh Thyme
- Leftovers (double any dinner recipes that you think you'd like to eat the next day)
- Soup! Soup makes the perfect leftover!
- Other favorite lunch recipes: Crunchy Thai Salad, Basil Quinoa Salad, leftover Wild Salmon Patties, leftover almond chicken, or easy chicken caesar.
Winging It Lunches
- Avocado Toast: 3 eggs + smashed avocado on a piece of GF toast
- Smoothie Bowl: easy to keep these ingredients in your freezer and pantry!
- Turkey sandwich or Siete Almond Flour Wrap
- Picnic Plate: Turkey slices, cheese, raw veggies, hummus, fruit, nuts
- Yogurt Parfait
